Resipi: Asam Pedas Ikan Merah

Assalamualaikum!

Nak simpan resipi ni supaya boleh refer balik bila nak masak asam pedas nanti :D

Resipi ni saya ambil daripada nenek kesayangan saya yang berasal dari Melaka.

Insya Allah, mesti sedap. Apa yang nenek pesan, jangan masukkan bahan2 seperti bawang merah & bawang putih dalam blender, nanti kuah tak sedap.

Kalau nak masak asam pedas, kena pakai asam jawa, jangan pakai asam keping.

Bahan-bahan
4 biji bawang merah kecil (dihiris)
2 biji bawang putih (dihiris)

10 biji bawang merah kecil (dipotong halus) *
5 biji bawang putih (dipotong halus) *
Halia 1 inci (dihiris)
Sedikit belacan *
1 1/2 sudu makan cili kisar *
* Gaulkan bahan2 di dalam satu bekas

Ikan merah 4 keping
Air asam jawa
1 biji tomato (dipotong empat)
Daun kesum
Garam secukup rasa
Gula 1 sudu makan

Cara-cara Memasak

1. Tumis bawang merah dan bawang putih yang telah dihiris tadi.

2. Setelah kekuningan, masukkan bahan2 bertanda * dan tumis sehingga naik minyak. Masukkan gula.

3. Masukkan ikan dan tumis seketika.

4. Masukkan air asam jawa. Kalau nak masam lagi, tambahkan lagi asam jawa.

5. Masukkan garam dan daun kesum.

6. Bila kuah dah nak masak, masukkan tomato dan renehkan seketika.

Siap! :)

Recipe: Of Tomyam and Ikan Goreng Berlada

I was craving for tomyam, so I used whatever ingredients I had at home to prepare a pot of tomyam.

Of course, I Googled for the recipe first and 2 of the main ingredients which were missing from my pantry were the limau nipis and asam keping.

I had tomatoes, cili padi, serai and I used asam jawa instead in addition to the onions and garlic.

I used chicken as the main ingredient for this broth.

One thing I learnt was to NOT blend the tomatoes together with onions and garlic! (A mistake I made after watching a YouTube video on preparing tomyam).

On top of tomyam, I prepared ikan goreng berlada for hubby using ikan merah.

Glad he loved it! :D

IKAN GORENG BERLADA
3 big onions
2 cloves garlic
8-10 small cili padi (depending on how spicy you'd like it to be)
2 cili merah
1 tomato
1 tsp belacan
1 tsp sugar
1 tsp salt
1 cup cooking oil

Method:
1. Cut the onions, garlic, cili padi, cili merah and tomato (you need not slice them finely as you'll blend them at a later stage).

2. In a pan, pour 1 cup of cooking oil.

3. Fry the belacan until you can smell the fragrant. (I'd suggest that you open ALL doors and windows hehehehe). Make sure that it isn't burnt!

4. Pour all ingredients in (1) into the pan to stir-fry for 3-4 minutes.

5. Switch off the stove and let it cool for 2-3 minutes.

6. Pour everything into the blender. You can use the 'Pulse' option on your blender (if you have any), else you blend it until there are no chunky cili / onions, however, there has to be some form of texture to this cili paste.

7. Pour the blended mixture into the pan and add sugar & salt. Continue to fry this until it becomes a thick paste.

8. You can either add the fried fish into the pot or serve the cili and fish separately.

:) Hubby loved it and I ate the tomyam to my heart's content!

We both had second helpings of the rice and at the moment, my tummy is extremely full!

Muffinz Deli Cafe, The Magellan Sutera Resort, Sutera Harbour @ Kota Kinabalu, Sabah

I just LOVE Kota Kinabalu (KK)!

Probably because I first arrived in KK years ago when hubby and I spent our honeymoon and I instantly fell in love with the beach, the seafood and the friendly & warm people.

We spent our holiday in KK recently and found out about the Muffinz Deli Cafe located at The Magellan Sutera Resort.

To locate the cafe, just look for the swimming pool and children's playground.

We went there for dinner so we could easily locate the brightly lit cafe. :)

Come with me whilst I show you around.

Take a step inside, you'll be greeted by this wonderful splash of vibrant colors and our 3-yo toddler instantly got so excited as she went running around the cafe!

Hubby and I both LOVE the place!

We love the fact that the owners / designers had spent a fair amount of time thinking about the intricate details to design this place.

Loving this pillar in particular where they've installed a table around it and colorful chairs just for kids!

Photos of kids below makes the cafe more kid-friendly and you just feel like you're hanging out at a friend's place (your friends with kids, that is :D ).

They also have a pool-table below and the seating arrangement in this corner is slightly different as it reminds me of an All-American diner which I'd normally see in the movies.

Checking out the menu at their counter, the price range is affordable and we practically ordered quite a lot for the 3 of us :D

The food tasted GREAT!

We had a cheesecake, sandwich, a savory pie, Nutella Crepe and chocolate milkshake.

Whilst we were waiting for our food to arrive, hubby and our toddler went touring the cafe.

There was another section in the cafe below:

This space is just PERFECT for a private birthday party!

Check out the walls!

LOVE IT!

When we are in KK, we'd definitely return to Muffinz, for sure!
